Tender chicken thighs in a spicy honey lime marinade, grilled or baked, with a crisp finish and bold flavor.
# What You'll Need:
→ Meats
01 - 4 bone-in, skin-on chicken thighs
→ Marinade
02 - 1/4 cup honey
03 - 1/4 cup lime juice (freshly squeezed)
04 - 2 tablespoons soy sauce (gluten-free if needed)
05 - 1 teaspoon chili powder
06 - 1/2 teaspoon cumin
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon black pepper
09 - 1/4 teaspoon salt
10 - 1/4 teaspoon cayenne pepper (adjust for spice level)
# Steps to Follow:
01 - In a bowl, whisk together honey, lime juice, soy sauce, chili powder, cumin, garlic powder, black pepper, salt, and cayenne pepper to make the marinade.
02 - Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
03 - Preheat the grill or oven to medium-high heat (about 375°F / 190°C).
04 - Remove the chicken from the marinade, letting excess marinade drip off.
05 - Grill the chicken for about 6-7 minutes per side, or bake in the oven for 25 minutes, until the internal temperature reaches 165°F (75°C) and the skin is crispy.
06 - Let rest for a few minutes before serving.
