01 - 1 pound ground turkey

03 - 1 small yellow onion, finely chopped

07 - 2 tablespoons soy sauce or tamari
08 - 1 tablespoon hoisin sauce
09 - 1 tablespoon rice vinegar
10 - 1 tablespoon honey
11 - 1 teaspoon sesame oil
12 - 1/4 teaspoon red pepper flakes (optional)
13 - 1/4 cup water
→ Vegetables & Garnishes
14 - 1 large head butter lettuce or Bibb lettuce, leaves separated
15 - 2 medium carrots, julienned
16 - 1 small red bell pepper, julienned
17 - 1/4 cup chopped fresh cilantro
18 - 1/4 cup chopped roasted peanuts
19 - 2 green onions, thinly sliced
20 - Lime wedges, for serving
# Steps to Follow:
01 - In a small mixing bowl, combine peanut butter, soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, red pepper flakes, and water. Whisk until smooth and fully emulsified. Reserve for later use.
02 - Warm vegetable oil in a large skillet over medium heat. Add the finely chopped onion and cook for 2 to 3 minutes until translucent.
03 - Stir in minced garlic and grated ginger. Sauté for 1 minute until fragrant.
04 - Add ground turkey to the skillet. Cook, stirring and breaking apart with a wooden spoon, until turkey is browned and cooked through, about 5 to 6 minutes.
05 - Reduce heat to low. Pour the prepared peanut sauce over the turkey mixture. Stir thoroughly and simmer for 2 to 3 minutes until sauce is thickened and evenly coats the meat.
06 - Lay separated lettuce leaves on a serving platter. Spoon equal portions of turkey mixture into each leaf.
07 - Top each filled lettuce cup with julienned carrots, bell pepper, cilantro, peanuts, and sliced green onions. Garnish with lime wedges and serve immediately.
