01 - 1 pound ground turkey
02 - 8 corn tortillas
03 - Salt, to taste
04 - Freshly ground black pepper, to taste
05 - 1 cup shredded cheese, such as cheddar or Monterey Jack
→ Stuffing
06 - 1 cup cooked stuffing, crumbled
→ Toppings
07 - 1/2 cup cranberry sauce
# Steps to Follow:
01 - Divide ground turkey into 8 equal portions and roll each into a ball.
02 - Heat a large nonstick skillet or griddle over medium-high heat.
03 - Place a tortilla on the skillet, then immediately position a turkey ball in the center.
04 - Use a spatula or burger press to flatten the turkey ball evenly across the tortilla to the edges.
05 - Season the turkey with salt and pepper. Cook for 2 to 3 minutes until browned and cooked through on the bottom.
06 - Flip the tortilla so the turkey side faces down.
07 - Sprinkle a generous amount of shredded cheese and a spoonful of crumbled stuffing over the turkey.
08 - Continue to cook for 1 to 2 minutes, until cheese is melted and tortilla is crisp.
09 - Remove from skillet. Top each taco with a spoonful of cranberry sauce.
10 - Fold and serve immediately while hot.
